Old vegetables sprouting?

I have had so many vegetables sprouting...what do we make of this? Natural cycle or over use of fertilizers? Either ways, we can not throw away such a precious commodity. It would be a terrible waste.
So folks, behold my garden of old vegetables from my refrigerator that actually started sprouting while in the refrigeratorš¬.
I have had the unique pleasure of replanting, garlic pods, celery stalks, spring onions, onions and a potato today.
So far I have had all of the above grow really well in soil.
It hardly needed any maintenance, just afternoon water. I skip watering the plants on ten day it rains.
So far touch wood, I have seen them thrive and grow really well.
Today I planted a potato that was sprouting and I am hoping it takes to the soil well and grows.
Have fun planting and growing. It is extremely rewarding experience.
